The Pecan Christmas Cake

1oz - 28.3g

375g Raisins Chopped. 375g Sultanas. 125g Cherries. 125g X Peel. 60g Apricots. 60g Pineapple. 3 Tablespns Brandy or Rum. 3 Tablespns Sherry. 250g Butter. 1 1/4 Cups Brown Sugar. 2 Tblspns Marmalade. 1 Tablespn G. Syrup. 5 Eggs. 2 1/4 Cups P Flour (315g). 2 Teaspns Cinnamon. 1 Tspn X Spice. 1 Tspn Nutmeg. 1 Cup Chopped Pecans. 30 Pecan Halves to decorate. 1 Tablepsn Brandy extra _____ Put fruits in bowl, stir in Brandy & Sherry & leave overnight. _____ Cream B+S until light and creamy. Stir in marmalade + G. Syrup. Add eggs 1 at a time, beating well. Sift flour + spices & add alternately with fruit & nuts. Spoon carefully & evenly into tin 8”. Arrange Pecans on top _____ Bake in slow oven (150 deg. C.) for 3 1/2 hours. Remove from oven & sprinkle with Tblespn Brandy. Cover with G.P Paper & wrap in Newspaper until cool.

Spiced Carrot Cake

Cooking Time 40 to 45 mins, 350’-375’

4ozs Butter, 1/2 Cup Castor Sugar, 1 Tablespn Honey. 2 Eggs. 1/2 Cup Walnuts, 1 Cup Plain Flour. 1 teaspn Baking Powder. 1 teaspn Mixed Spice, 1/2 teaspn Carb Soda, 1 Cup finely grated Carrot.

Cream butter & sugar & honey. Add eggs one at a time. Fold in wlanuts & sift dry ingredients twice & fold into mixture with grated carrot & bake in 8x4 tin. Cool.

Spread with 3oz pkt Cream Cheese Vailla, 1 Cup Icing Sugar (sifted), Milk to mix if necessary. Sprinkle with chopped almonds.

Melon Pineapple Cocktail

1 cup Watermelon balls
1 ” Rockmelon “
1 1/2 ” Fresh Pineapple cubes
1 Tblspoon Castor Sugar
Qty Sweet Sherry

Put fruits into a bowl, sprinkle the sugar & sherry over.

Cover and chill until needed.

Spoon into each of individual bowls & top each with a sprig of mint.

[I suspect another writer for this card. The writing’s a 3rd style. And, there’s nothing on the back of this card, where as all the other so far have been 2-sided.]

Sponge Roll - Marj[orie] Suter

3 Eggs. 1/2 Cup Sugar, Vanilla, 1/2 Cup SR Flour.Add 2 dessertspoons Cocoa if like it chocolate. Small tray.

One Bowl Fruit Cake (Kaylene)

125g Butter melted. 750g X Fruit 1/2 Cup Raw Sugar. 2 Tbspns Marmalade. 2 Eggs lightly beaten. 1/4 Cup sweet sherry. 3/4 Cup plain flour. 1/4 Cup SR Flour. Combine all ingredients well. Spread into cake tin & top with blanched almonds if desired.

Bake in slow oven for 1 1/2 hours. Cover with foil & cool in pan. Keeps 2 weeks.

Caramel Slice - Thelma Mudge

Caramel - 1/2 Tin Condensed Milk. 2 Tablespns Golden Syrup. 2ozs Margarine or Butter. 1/4 Cup Raw Sugar. 1/2 teaspn vanilla. Bring all ingredients to boil. Stir constantly for 5 minutes.

Crust Make crust first - 4 Cups Corn Flakes, 1 Cup Coconut. 1 Cup Icing Sugar, 4 Tablespoons Cocoa. Melt 1/2 lb Copha & pour over dry ingredients. Spread 1/2 mixture in Swiss Roll tin & chill a while. Spread caramel and cover with the rest of the crust mixture.

Egg & Bacon Pie - Iris

Egg & Bacon Pie (Iris)

3 Eggs. 1 1/2 Cups Milk, 1 Onion, 1 Cup Bacon, 3/4 Cup Pastry Mix, 3/4 Cup Grated Cheese.

METHOD Beat Eggs add milk, finely chopped Onion. Cut bacon in small pieces, add pastry mix & grated cheese. Stir and pour into buttered & floured 9” pie plate & bake 180’ 40 to 45 mins.

Serve with Parsley and Salad.

Chicken Provencale - Iris

Chicken Provencale - Iris

5 to 6 Chicken Breasts. 1/2 Cup Flour. Salt & Pepper. 4 ozs Butter. 1 Medium Onion. Pinch Garlic. 1/2 cup Sherry. 440g Tomato Puree (Edgell). Chopped Parsley.

Method Roll Chicken Pieces in Flour. Heat Butter in Frying Pan. Add Chicken Pieces, saute until golden brown on all sides. Trasfer  to casserole. Add onion and garlic to pan. Brown. Add tomato puree & sherry. Stir until boiling. Little salt & pepper. Put over chicken and cover.

Bake in moderate oven (180’C) 1 hour.

Serve with chopped parsley.

[After speaking to my Dad about doing this transcription project, he mentioned that some of these cards would have been written out by my Grandpa. I suspect this might be one of those, though I’m not certain.]

Cheese Bacon Slice

Cheese Bacon Slice

1 teaspn Oil. 3 ozs Bacon Chopped. 8ozs Onion finely Chop. 2 1/2ozs Butter softened. 10 Slices day old bread. 4ozs Grated Cheese. 3 Large Eggs beaten. 1/4 pint Cream. (3Tblspns Greek Yogurt?) 4ozs Milk. 1/4 level teaspn Paprika. 1/4 level teaspn Chilli Powder. 1 teaspn dry mustard. 10” greased tin.

Heat oil & fry bacon for 2 mins. Add onion & fry 1 min. Butter bread slices on one side thickly. Cut into quarters diagonally, line tin with half bread, sprinkle with 1/2 cheese then add remainder of bread, remaining Cheese. Scatter bacon and onion on top. Mix together Eggs, cream, yogurt, milk, Paprika, Chilli Powder & mustard. Slowly pour P.T.O.

Cheese Bacon Slice Contd…

over the bread & cheese. Chill for 1 hour. Warm Oven for 1 hour.

Venetian Biscuits Connie / Lemon Slice

Venetian Biscuits Connie

1/4 lb Butter, 1/4 lb Sugar. 8 ozs Plain Flour, 1 teaspn C of Tartar. 1/2 teaspn  Carb Soda. 1 Dess.Spn Crushed Walnuts, 1 teaspn Coffee Essence, 1 Egg.

Cream Butter, Sugar, add Egg Coffee Essence, flour etc. Roll into Balls & dip in sugar. Press with fork.

Lemon Slice

1 pkt Marie Biscuits, 4 ozs Butter, 3 ozs Coconut, Lemon Rind,  1/2 Tin Condensed Milk.

Mix Crushed Biscuits, Coconut & Lemon Rind. Stir Condensed Milk & Butter over low heat until blended. Add Biscuit mixture. Mix well & press into Lamington tin. Ice with Icing Sugar mixed with Lemon Juice.

Chocolate Cake (Jean)

1 1/2 Cups SR Flour. 3/4 Cup Castor Sugar, 1/4 lb Butter (melted). 1 Egg. 3/4 Cup Milk. 1/4 Cup Cocoa. Vanilla. 1/2 teaspn Carb Soda dissolved in 1/2 Cup Boiling water. Add last. Beat all together. Paper tin & leave until cold. Square tin.

Banana Cake “Kylie”

4 oz Butter, 1 Cup Sugar. 2 Eggs. 1 3/4 Cups SR. Flour, 1/2 Cup Milk. 1/2 teaspoon Carb soda, 2 Bananas, Mashed.

Method Cream Butter & Sugar, add eggs & bananas, then add soda dissolved in milk with flour. Cook in ring tin 180’C for 30 minutes.
